Last Saturday, June 7, we experienced a very special day as part of our workshop series on self-sufficiency: making jam with traditional apricot varieties.
As with all sessions in this series, we combined a theoretical part with a hands-on activity. First, we deepened our knowledge of this iconic fruit of our land with the expert guidance of Llorenç Payeras. We learned about the main native apricot varieties, their history, characteristics, and methods of sustainable cultivation — a window into the agricultural richness that surrounds us and often goes unnoticed.
Then we got to work: we turned these fruits into homemade jam, using traditional, respectful methods that honour the product. A handcrafted process that connects us to our roots and invites us to appreciate the flavours of the past.
